Looking for tried and true enchilada recipe, with homemade sauce.?

My favorite enchilada sauce is a mole' sauce from epicurious.com. It's under "Chicken and green olive enchiladas". It's neither red nor green, and has the hint of chocolate that makes it a mole'. As far as the filling, I use either black beans and rice, or dirty rice. Taco meat for the guys.
